Recipe: Spaetzle with Creamy Mushroom Ragout Epcot Food and Wine Festival 2007, Germany

Spaetzle with Creamy Mushroom Ragout
Epcot Food and Wine Festival 2007, Germany
Serves 6

Mushroom Ragout
2 tablespoons canola oil
2 tablespoons shallots, finely chopped
1 tablespoon garlic, finely chopped
1 cup Oyster mushrooms
1/2 cup Cremini mushrooms
1/2 cup button mushrooms
1/4 cup Riesling wine
2 cups water
2 tablespoons cornstarch
Kosher salt and freshly ground black pepper

Spaetzle
3 cups all-purpose flour
1/2 cup semolina flower
3 tablespoons of sea salt
3/4 cup water
10 whole eggs
2 tablespoons vegetable oil
2 tablespoons butter
Sea salt and freshly ground black pepper

1. In a large frying pan, heat the canola oil and add the shallots. Cook shallots for 2 minutes then add the garlic and all of the wash and quartered mushrooms. Deglaze the pan with the Riesling, let cook for 2 minutes.

2. Combine the water with the cornstarch and add it to the mushrooms. Bring the liquid to a boil, stirring until sauce thickens. Season to taste with salt and pepper. Set aside and keep warm.

3. To make the spaetzle, mix the all-purpose flour, semolina flour and salt together until well incorporated. Add the water and eggs mixing until the dough has a firm but wet consistency. In a 10-quart pot, fill 3/4 full with water and are 2 tablespoons vegetable oil. Bring water to a boil and using a spaetzle press or a large-holed colander, press the dough through the holes and dropped directly into the boiling water. The spaetzle is cooked once it rises to the top, about 3- 5 minutes. Transfer the spaetzle to a colander with a slotted spoon and set aside to drain for 2 minutes.

4. Melt 2 tablespoons of butter in a large frying pan over medium heat, and sauté the spaetzle, seasoning with salt and pepper as you cook, for 1 – 2 minutes or until golden brown.

5. Divide spaetzle onto 6 serving plates and serve with mushroom ragout on top.

1/2 ounce  Midori melon liqueur

1/4 ounce  banana liqueur

1/4 ounce  citrus juice

Sprite

Mix together. Serve over ice.

Note: May substitute Grand Marnier for the Van de Hum Tangerine Liqueur.

Disney’s Animal Kingdom: Alive with Magic will air on Animal Planet – June 27, 2017

Animal Planet and Walt Disney team up to bring you Disney’s Animal Kingdom: Alive with Magic, airing June 27, 2017 at 8:00 pm, 11:00 pm, 3:00 am EST. And knowing the Animal Planet channel, I am sure it will show many more times after that…just check you local times guide.

This hour long show will follow Disney experts through the different lands and landscapes of the the Animal Kingdom. They will talk about Disney’s conservation efforts, animal habitats and how the park changes from day to a night time park. Also included will be a look at the parks new land Pandora- the world of Avatar, including a special interview with James Cameron, the creator of the movie that inspired the new land.

Eat to the Beat Concert Series – 2017

This years Food and Wine Festival at EPCOT will be from August 31 – November 13, 2017. Every night of the festival you will have the opportunity to see one of the 30 groups that have been booked for this years event. Concerts are FREE, but you will need to have a EPCOT park ticket to get into the park to see the show.

  • World Showcase at Epcot America Gardens Theater
  • Daily from August 31 to November 13, 2017
  • Showtimes at 5:30 PM, 6:45 PM and 8:00 PM

For those who want to make sure you will be guaranteed a seat for the concert of your choice, you might want to look into the Eat to the Beat Dinning Packages. The package is available at certain EPCOT table service restaurants. The price of the package will depend on the restaurant you choose and if you have lunch or dinner. Lunch reservations will have a choice of the three concert times for that night. (5:30 PM, 6:45 PM and 8:00 PM) Those with dinner reservations, will have a choice of the two later show times…it all depends on your reservation time, what show time you will get.

Guests should arrive at the America Gardens theater, at a minimum of 15 minutes prior to their Eat to the Beat Concert show time and enter via the designated Dining Package entrance.

Disney Villains are coming to a Forever stamp near you on July 15, 2017

The Disney Villains Forever stamps will be dedicated at 1:30 p.m. PDT July 15, during D23 Expo 2017, Disney’s ultimate fan event at the Anaheim Convention Center, Center Stage. The public is encouraged to share the news on social media using the hashtag #DisneyVillainsStamps. Beginning June 22, the stamps may be pre-ordered at usps.com/shop for delivery shortly after the July 15 issuance.

The Disney Villains stamps are being issued as Forever stamps that are always equal in value to the current First-Class Mail service one-ounce price.

2018 Disney Dining Plan

Today Disney released info for the 2018 Disney Dining Plan. And the new item added this year is 1 alcoholic drink (per-meal), for those 21 and over, to have with their meal.

 

 

Today Disney released info for the 2018 Disney Dining Plan. And the new item added this year is 1 alcoholic drink or specialty non-alcoholic drink, per meal. You must be 21 or over to be able to order the alcoholic drinks. To participate in the Dining plan you must be staying at a Disney property hotel, and purchase a Magic Your Way Package. The package will include the cost of the hotel room and you park tickets. The dinning plan is an optional add on to the package, and not need to enjoy the Walt Disney World resort restaurants.

A sample of the type of drinks that you will be able to order under the 2018 Dining Plan are as follows:

Artisanal Milkshakes
Fresh Smoothies
Premium Hot Chocolate
Soda, Coffee or Tea

A single-serving alcoholic beverage includes items such as:

Beer or Cider
